Creamed Chicken
We love this recipe for creamed chicken. I make it often. It is quick and easy if you use chicken that has already been cooked earlier. |

Yield: 6 servings
Ingredients:
- 1 (3 - 3½ pound) chicken or use 2-4 cups of cooked chicken (I've also used turkey)
- 1 (10-ounces) frozen peas or mixed vegetables
- 3 TBSP butter
- 3 TBSP flour
- 3 cups milk
- 3/4 tsp salt
- 3/4 tsp pepper
- 1 (3-ounce) can sliced mushrooms, drained
- 1 (2-ounce) jar diced pimiento, drained
- 1/3 cup slivered almonds, toasted
- Rice, mashed potatoes or patty shells
Directions:

- Combine chicken and water and salt in large pot
- Bring to a boil; cover and reduce heat and simmer 1 hour or until tender
- Remove chicken from broth and cool.
- De-bone chicken and cut meat into bite size pieces
- Cook vegetables following directions and drain
- Sauce
- Melt butter in a large sauce pan over low heat
- Add flour stirring until smooth
- Cook 1 minute, stirring constantly
- Gradually add milk
- Cook over medium heat stirring constantly until thickened and bubbly
- Add next 5 ingredients and mix well
- Stir in chicken and peas and make sure everything is heated.
- Serve over rice
